The spring has come, the sun is shining and once in Florence, it is not a bad idea to reserve a few days to travel to a small paradise, located between the provinces of Livorno and Grosseto. We are talking about Maremma, made unique by the variety of its territory. The ingredients differ according to the area in which the acquacotta is prepared, always based on the seasonality of the food. It has some basic ingredients, such as eggs, peeled tomatoes, onions, pecorino cheese and slices of stale bread, toasted and laid on the bottom to incorporate all the soup. A real delight. No matter what dish you decide to try, there’s one fundamental ingredient for all of them: the extra virgin olive oil from Maremma.
