Our Panoramic Bar is worth the visit just for the spectacular view of Florence, but there’s more! We decided to modernize our proposal by designing drinks that capture the essence of Florence, from its natural beauty to its cultural and historical heritage, creating a unique sensorial experience thanks to modern mixology techniques.
“After traveling for several years for the world and having worked in 3 different continents I brought with me a wealth of experience that I tried to merge with the uniqueness of this splendid city. In fact, in collaboration with our barman Ranjula Wickrama we created a list of 6 different signature cocktails, using of procedures such as clarification or fatwash”, says Leonardo Camillo, Food & Beverage Manager of Antica Torre Tornabuoni.

Created and conceived in our winter garden, the wonderful covered part of our terrace overlooking the Duomo. It is a twist on the classic old fashioned which is created by doing a ”fatwash”, which means to infuse Bulleit Rye whiskey with Tuscan ham and finishing with white truffle honey, all served with crunchy ham chips.
The terrace in rose
Conceived while Leonardo was walking through the beautiful Rose Garden and is intended as a tribute to all the wonderful flower gardens of Florence. It is prepared in an elegant flute and combines the delicacy of the Rose Elixir produced by the Officina di Santa Maria Novella and the strong and smoky character of the Mezcal Vida Del Maguey.
It is the elegant reinterpretation of the classic Piña Colada, inspired by the famous Florence Cathedral. It is clarified, a filtration process through which a clear, transparent, and creamy compound is obtained, creating a light texture with a tropical touch. A hymn to modernity, just as during the Renaissance this monument was created with innovative techniques.
It will be our modern version of the classic negroni: in fact it will be “broken down” into different elements. A base will be prepared with DU.IT. gin, dry Vermouth 1757 and Italicus, then completed with a Bitter Campari foam which will give a light and frothy sensation on the palate.
It is the third version of the cocktail created in 2017 by Ranjula and modernized with a more captivating touch, will in fact be served with a fiery passion fruit garnish, to remember the sunset over Florence.
It will be our version of the classic vesper, inspired by the Arno river which majestically flows through Florence. Made with Peter in Florence gin and a part of Ketel One vodka, it will be finished with bergamot essence that captures the fresh and citrus essence of the city. ”
Other than the new cocktails, there will also be a change of the food and wine list in which a small selection of 4 super excellences will be introduced. “We have also decided to add to our wine offering a small selection by the glass of great Tuscan and Italian references, thus becoming one of the only places in Florence that allows tasting these excellences by the glass”, explains Leonardo. “In fact there will be the possibility to order wines by the glass including Tignanello Antinori, Barolo Gaja Dagromis, Luce Frescobaldi and the famous Brunello di Montalcino Biondi Santi. The selection could change in the future by introducing new proposals, obviously premium.”
Our food offer will also be modernized with the introduction of seasonal dishes and local 0 km products, always respecting our philosophy of sustainability and territoriality. The dishes are created by the chef Carlos Curasma.
