It’s a place that still manages to move people… sometimes even me, despite walking through it ten times a day.”

Among the most representative ingredients is Mora Romagnola pork, a rare heritage breed raised free-range in the Tuscan-Emilian Apennines. “It’s an iconic dish for us,” explains the dining room director of Enoteca Pinchiorri. “We first cook it in broth and then roast it on the spit, serving it with mustard-seasoned radicchio, arugula chlorophyll and spicy carrot mayonnaise. We have worked with this product for more than fifteen years. We know it so well that, in the end, our task is simply to place it on the spit… the rest is its own magic.”
