Schiacciata alla Fiorentina Recipe
Ingredients
- 300 g (2 ½ cups) all-purpose flour
- 150 g (¾ cup) sugar
- 2 eggs
- 40 g (3 tbsp) extra virgin olive oil
- 70 g (¼ cup) orange juice
- 50 g (¼ cup) milk
- Zest of one orange
- 1 tsp vanilla extract
- 1 pinch of salt
- 1 packet (16 g) baking powder
For the filling:
- 200 ml (¾ cup) sweetened whipped cream
Instructions
- Sift the flour and baking powder into a bowl.
- In another bowl, beat the eggs with the sugar and salt until the mixture is light and fluffy.
- Add the orange zest, vanilla extract, orange juice, and extra virgin olive oil, then mix well.
- Gradually incorporate half of the sifted dry ingredients, then add the milk. Finally, mix in the remaining dry ingredients.
- Grease and line a rectangular baking pan with parchment paper, then pour in the batter.
- Bake in a preheated oven at 180°C (350°F) for 20 minutes.
