It is the very first extra virgin olive oil obtained from the annual harvest, usually between late October and early November. The olives, still green and rich in polyphenols, are pressed within a few hours of picking — strictly cold-extracted — to preserve their freshness and fragrance.
The result is an oil with a bright green hue and golden highlights, intense herbaceous aromas, and a lively taste that is slightly spicy and pleasantly bitter: a pure concentration of nature and health, best enjoyed raw on a slice of freshly toasted Tuscan bread.

The story of Diadema begins in Impruneta, in the beating heart of Chianti, where the Giannotti family has nurtured a passion for the land and its fruits for generations.
The adventure started with Alberto Giannotti, a visionary founder able to combine tradition and innovation. Today, his daughters Giulia and Livia, together with Francesco Bellini, carry the project forward with the same dedication, creating a perfect harmony of art, nature, and hospitality.
Over the years, Diadema has become synonymous with excellence: wines and oils that narrate Tuscany with elegance, authenticity, and a contemporary spirit.
From the heart of impruneta to our tables
The olive groves of Fattoria Villa l’Olmo, dating back to the 18th century, stretch over approximately 23 hectares and preserve the region’s most traditional varieties — Moraiolo, Frantoio, Leccino, and Pendolino.
The hand harvest, carried out between late October and early November, ensures the utmost care for the fruit. The olives are cold-pressed on the same day at the estate’s own mill, preserving all their aromas and nutritional properties.
The result is an oil that embodies the soul of the Tuscan landscape: deep green, with notes of freshly cut grass and green tomato, flavors of sweet almond, artichoke, and ripe olive, and a pleasantly spicy finish.
